Ingredients

  • 1 large red onion or 2 small-to-medium ones, sliced thinly into half-moons
  • 0.5 coffee mug Vinegar white vinegar, apple cider vinegar, or a mix of both
  • 0.5 coffee mug Water
  • 1 tsp Sugar maple syrup, or zero-calorie sweetener (erythritol/stevia)
  • 1 pinch Salt
  • 1 tsp black peppercorns 1 smashed garlic clove, or bay leaf

Instructions

  • Pack the jar: Stuff the sliced red onions tightly into a clean glass jar. Add optional garlic or peppercorns if using.
  • Make the brine: In a measuring cup or mug, whisk together warm water, vinegar, salt, and your sweetener of choice until completely dissolved.
  • Submerge: Pour the liquid over the onions until fully covered. Press them down with a fork so they sit beneath the brine.
  • Rest & store: Let the jar sit on the counter for 20–30 minutes until bright pink, then pop the lid on and store in the fridge.
